O GRUB mostra apenas a opção do carregador do Windows 8, clicando nele traz de volta o menu do GRUB

Acho que substituí o gerenciador de inicialização do Windows pelo GRUB.

Minha pergunta é como configurar o GRUB para que ele comece listando minha instalação do Windows 8.

Sim, você fez - e, infelizmente, talvez até mais, muito mais!

Não há sistema operacional Windows instalado no disco.

É por isso que o Windows não está listado e não pode ser inicializado.

Quando você quiser recuperá-lo, será necessário reinstalá-lo.

Sim, você substituiu o Windows. Outra coisa que notei é que o "SecureBoot talvez esteja habilitado". Certifique-se de que o secureboot esteja completamente desativado no BIOS. Você tem que instalar o Windows e verifique se você tem uma mídia de recuperação para o Windows. Boa sorte.
