Descobrimos que usar Wayland foi o culpado, possivelmente combinado com os drivers DisplayLink. Instalando os drivers mais recentes (4.4) do link e alternando de volta para "Ubuntu" (o padrão) na tela de login resolvida a questão.
Acabei de instalar o Ubuntu 18.04 (estava usando o Elementary OS antes) no meu Dell Latitude, que tem dois monitores conectados por meio de um dock DisplayLink. Eu consegui três telas (tela de laptop + duas externas) trabalhando no Elemantary OS depois de instalar os drivers do DisplayLink no site da Dell. No Ubuntu 18.04 não estou vendo os monitores externos, apesar de ter conseguido instalar os drivers DispplayLink.
Eu tentei com drivers proprietários da NVIDIA (nvidia-driver-390) e com o X.Org nouveau (xserver-xorg-video-nouveau).
EDIT (out 2018): Instalado o último driver Dell DisplayLink que diz que está trabalhando com o Ubuntu 18.04 de link A questão permanece.
Outro problema, possivelmente relacionado: Eu só posso inicializar no Ubuntu usando o "Ubuntu on Wayland", o Ubuntu padrão apenas volta para a tela de login depois que eu digito minha senha.
