The OpenSSH suite replaces rlogin and telnet with the ssh program, rcp with scp, and ftp with sftp. Also included is sshd (the server side of the package), and the other utilities like ssh-add, ssh-agent, ssh-keysign, ssh-keyscan, ssh-keygen and sftp-server.
Isso realmente significa que ele substitui todas essas coisas e vai quebrar coisas no servidor? Ou significa que oferece essas alternativas?

Isso significa que oferece essas alternativas. Por padrão, o ssh usa a porta 22 e telnet a porta 23. Então, se você usar o scp, ele se conectará ao servidor ssh remoto. Se você usar o rcp, ele se conectará ao servidor de telnet e tudo será separado e funcionará de forma independente.
