O ripper de linha de comando abcde tem essa capacidade. Para instalar, basta executar o seguinte comando em uma janela do Terminal:

Esta é uma configuração básica e muitas, muitas outras opções estão disponíveis, incluindo:
- Incorporação automática da arte do álbum baixado
- Muitas, muitas outras opções para download de álbuns
- Diferentes opções de codificação flac
- A possibilidade de codificar vários outros codecs simultaneamente
- Nomenclatura de arquivos, locais de pastas, etc.
Mas essa configuração básica pode ser suficiente para seus propósitos. Se assim for, basta inserir seu CD de áudio e executar o comando:
