O que posso fazer?
Como você está rodando em uma VM, você não quer que o ubuntu tente reinstalar o grub depois de alterar qualquer coisa relacionada ao kernel, já que você não tem um gerenciador de inicialização próprio.
Editar
/etc/kernel-img.conf
E comente as linhas:
postinst_hook = update-grub
postrm_hook = update-grub
Você provavelmente precisará de um
sudo apt-get -f install
depois
