Isso pode funcionar:

eval "nginx -V | grep 'configure arguments: ' | sed -n -e 's/^configure arguments: /begining command /; s/$/ end string/p'"

Atinge a linha direita, substitui configure arguments: pelo início comando e acrescenta no final uma string, finalmente imprime o resultado como uma string que é executado.
