Isso pode resolver seu problema ...
Seu fstab parece estar quebrado, basta modificar /etc/fstab
e alterar a linha que monta sua raiz para a nova, provavelmente o UUID = XXX,
Para encontrar todos os uuids, execute blkid
como root.
Se o seu grub.cfg estiver desatualizado, use grub-mkconfig -o /boot/grub/grub.cfg
para gerar novamente o grub.cfg
EDITAR
Observe que, quando o grub verifica o dispositivo raiz, ele usa o atual montado como raiz. Você precisará modificar manualmente o grub.cfg e inicializar a partir do SSD, depois executar o grub-mkconfig
novamente
