Eu tenho uma placa de captura Elgato Video Capture V2 que eu gostaria de usar para capturar S-Video. Infelizmente, quando eu uso o tvime para capturar, a saída é mostrada em preto e branco. Eu testei isso usando queijo também, e a saída também era preto e branco. Conectando S-Video na minha televisão me dá toda a cor.

Não tenho certeza se isso vai ajudar em tudo, mas eu só tive uma luta com a minha placa de captura Elgato saída S-video como preto e branco.
Acabei mudando as configurações do software Elgato para 'composite' em vez de S-video e depois mudei a entrada do cabo para a conexão amarela quando no vermelho e ele funciona perfeitamente agora com cores!
