Embora não seja uma solução para o problema, consegui fazer a VPN funcionar usando o cliente e o perfil openvpn nativos do provedor
Parece que o Network Manager não está apenas gostando da conexão feita pelo cliente Pritunl

Eu instalei e configurei o cliente priunl vpn da mesma forma que na minha outra máquina Ubuntu 16.04. Cerca de 15 segundos depois que eu faço uma conexão, ele é morto e eu não consigo entender o porquê.

UPDATE Remover o network-manager interrompe completamente a canela, então isso não é uma opção, no entanto, eu aumentei o nível de log do NM para o DEBUG
